It's not all salads and smoothies folks!
This dinner is one of our favs and is seriously more satisfying than most anything I could order at a restaurant. I don't think a week has gone by where we haven't ate these.
To keep things simple, we buy pre-made guacamole from Costco but feel free to make homemade. This brand comes without any additives and is a great price for organic.

We also buy pre-made salsa from Costco. Again, free from any unnecessary preservatives. We love having this stuff around all week for lunches and quick dinners.

Plant-based Potato Nachos
(feeds a family of 5)
INGREDIENTS:
-3 lb. bag of organic red potatoes
-guacamole
-salsa
-4 cups beans (pinto and black beans are our favorite on nachos)
-1 head of romaine lettuce (chopped)
-1 tsp onion powder
-1 tsp paprika
-1 tsp cumin
-1 tsp salt
-Optional: sliced black olives, jalepenos, hot sauce
DIRECTIONS:
1. Slice potatoes approximately 1/2 inch thick and place on a parchment lined baking sheet.
2. Sprinkle with onion powder, paprika, cumin and salt.

2. Roast in oven at 425 for approximately 25 minutes.
3. Top with "Plant-Based Queso" and beans.
4. Put back in the oven at 425 for 8 minutes.
5. Top with lettuce, pico de gallo, guacamole, olives, jalapenos and hot sauce.
