Rice Bowl Power Lunch

Now look, I know it's the end of the school year and some of you may tell me to shut the front door when I suggest anything other than a PB&J for your kid's lunch but I'm going to post this anyway with my fingers crossed. If anything, save this idea for next year when we all go back to being Pinterest parents for a few months! ;)

Since we cook rice and beans in bulk, this is a quick and easy lunch for my 1st grader and my 36 year old.

-Whole grain (pic: Basmati rice)

-Beans (pic: black beans)

-Guacamole (pic: Costo Organic Wholly Guacamole)

-Salsa: (pic: Costco Fresh Organic Salsa)

-dash of cumin and salt
