Carrot dogs tonight. For real. Try them!
Tonight I marinaded them for a few hours in a blend of broth, soy sauce and spices and I honestly don't think they tasted any better than when I just threw them in the oven raw. Organic carrots are a must for this one, the difference in sweetness is noticeable. We've never done them on the grill but plan to try it soon!
Spring Coleslaw on the side is so easy and so delicious!

Carrot Dogs
(feeds a family of 5)
INGREDIENTS:
-bag of 12-15 whole organic carrots
-2 bags of whole grain hot dog rolls
-Topping suggestions: ketchup, mustard, relish, jalapenos, etc.
DIRECTIONS:
1. Bake in oven at 425 for 30-40 minutes or until soft.
2. Load with toppings!

Plant-based Spring Coleslaw
(feeds a family of 5)
INGREDIENTS:
-Bag of coleslaw mix -2 chopped apples -3/4 cup raisins -3/4 cup chopped pecans -1/4 cup pumpkin seeds -2 TBSP apple cider vinegar -1 vanilla coconut/almond/soy yogurt -Salt and pepper optional
DIRECTIONS:
1. Mix and serve.
So tasty and light! Again, the yogurt is not pure plant food but it gets the job done and only 1 yogurt is used for the large bowl it makes.
