Raw & Delicious Zucchini Bowl

I've been trying to eat at least one raw plant-based meal a day for breakfast or lunch, along with my green smoothie for breakfast. When I do, I feel like I have endless energy!

Raw Zucchini bowl

(Feeds one person)

INGREDIENTS:

BASE:

-1 zucchini spiralized thick

SAUCE:

Blend or mash the following:

-1/2 avocado -1/2 tsp onion powder -1/2 tsp cumin -Pinch of salt -1/8 cup water

TOPPINGS:

-grated or spiralized carrot -sprinkle of pine nuts -chopped fresh cilantro

So satisfying and delicious!🌱❤
