Pad Thai Peanut Sauce with Noodles or Zoodles

Perhaps some ingredients in tonight's dish aren't straight from nature BUT Pad Thai is SUCH a craveable dish! I figure, it's much better to make it at home than order from a restaurant where you have no clue what they use! (and cheaper!👊)

This is seriously SO SO GOOD. If you like Pad Thai, you HAVE to give it a try!

Tonight I made it two ways, one mostly raw and one cooked:

The raw version had zuchinni noodles (spiralized), shredded carrot, green onion, chopped snow peas and fresh basil and lime. Topped with the sauce below. Mostly raw and simply amazing and bursting with flavor.🌱❤

The version for the kids had all the veggies above cooked on the stove in water and garlic. Served with rice noodles, the sauce and fresh basil and lime. Super delicious, kids got some veggies in and it's one of their favorites!!👏😄

Pad Thai Peanut Sauce

(The sauce is flavorful so a little goes a long way. This was enough sauce for my entire family)

-4 TBS soy sauce -2 TBSP peanut butter -2 TBSP honey (agave if vegan) -2 TBSP ketchup (i know, i know😮) -2 TBSP lime juice (approx. 1/2-1 lime) -1/2 cup water

Whisk and heat over low. Serve immediately as the sauce will thicken over time.
