One thing we are never without in our fridge is a whole grain* and beans**. We cook them in bulk about twice a week in our Instant Pot (one of my Top 5 kitchen gadgets for sure) and eat them throughout for lunches and quick dinners on nights we are crunched for time. We add all kinds of things to flavor it. To name a few (but not all of these at once!): guac, salsa, cashew "cheese", roasted veggies, greens, hot sauce, herbs, etc. The fancy meals I try to showcase are in efforts to show everyone that plant-based is more than just eating lettuce. Plant-based food doesn't have to be boring BUT sometimes there is value in simplicity. Cooking in bulk and having easy to grab meals has been crucial for us! *we like barley, brown rice, buckwheat, millet, oats, quinoa, wild rice, quinoa and whole wheat pasta
