I raided the pantry today and came up with these guys. Not an everyday breakfast because they take a little time but good for a slow Sunday morning. I made extra for later in the week. Enjoy!🌱❤

Filling & Delicious Breakfast Cookies (makes 24 large cookies)
DRY INGREDIENTS:
-2 cups rolled oats -1/4 cup chia seed -1/2 cup unsweetened coconut flakes -1/2 cup sliced almonds -1 tsp baking powder -1 cup almond flour -1/2 cup organic whole wheat flour* -2 tsp cinnamon -3/4 cup raisins
WET INGREDIENTS:
-1/4 cup fresh ground flax in 1/3 cup water -1/2 cup applesauce -1 mashed bananas -1/2 cup maple syrup -date paste**
*Makes the cookies not gluten free. You could sub more almond flour but cookies will be slightly more crumbly.
**8 dates soaked in hot water. Drain and then blend with 1/4 cup almond milk.
DIRECTIONS:
Bake at 375° for 13-15 minutes. Lets cool before removing from cookie sheet so they stay together.
