Plant-Based Mozzarella "Cheese"

So about those cheese alternatives...

What if you didn't have to give up pizza? Or tomato, mozzarella and basil?

Seriously guys this is sooo close to the real thing!! Would you be willing to try it??

Plant-Based Mozzarella "Cheese"

(Makes 4-5 silicone cupcake molds)

INGREDIENTS:

-1/2 cup cashews (soaked overnight or in hot water for 30 mins) -2 cups hot water -4 TBS + 2 tsp tapioca starch -2 TBS olive oil -1 garlic clove -1 1/2 tsp salt -2 tsp lemon juice -1 tsp nutritional yeast

DIRECTIONS:

1. Soak cashews overnight or in hot water for 30 mins.

2. Blend all ingredients.

3. Pour mixture into pre-heated pot.

4. Heat on med-high heat until mixture thickens and shrinks, stirring constantly.

5. Reduce heat to low-med for additional 2-3 mins.

6. Pour in silicone cupcake molds.

7. Store in refrigerator.
