Prior to going plant-based I was a big sucker for a giant salad slathered in a creamy dressing. Doesn't a good dressing just make you feel excited about eating ALL the vegetables?!?!
Big Caesar salad for lunch today. If you are a fan of creamy dressings, this will change your life!!

Plant-Based Caesar Dressing
(can serve a whole family for small side salads or in my case today, just me because I ate a TON of romaine lettuce for lunch!)
INGREDIENTS: -1/2 cup raw cashews -1 TB nutritional yeast -1/4 cup water* -4 TB fresh lemon juice (approx. -1 large lemon)* -1-3 garlic cloves (preference) -1/2 tsp salt -Fresh ground pepper (preference)
DIRECTIONS:
1. Soak cashews overnight or quick soak in hot water for 30 minutes. If you have a high-powered blender you can omit this step.
2. Blend all ingredients until smooth and serve over your favorite salad greens and veggies.
*if the dressing comes out too thick, add either more water or lemon juice dependent upon how tangy you prefer it
