Super tasty Chickpea Salad

This salad is creamy, satisfying and filling! It makes a ton and is super easy. It is great to have in fridge for quick school and work lunches.

Chickpea Salad

(feeds a family of 5)

INGREDIENTS:

FOR DRESSING:

-1/2 cup raw soaked cashews (30 mins in hot water or overnight) -1/4 cup water -4 TBSP fresh lemon juice -1 TBSP nutritional yeast -1-3 garlic cloves (preference) -1/2 tsp salt -ground pepper to taste

FOR SALAD:

-5 cups cooked chickpeas

-2 cups chopped celery

-1 cup chopped dill or more (preference, we like lots!)

Mix all ingredients! Tastes great in a wrap, on bread or over rice with lettuce and tomato.

DIRECTIONS:

1. Blend dressing ingredients in a high-powered blender.

2. Mix dressing with salad ingredients. Tastes great in a wrap/toast/lettuce cups with lettuce and tomato, or over a whole grain.
