Amazing Carrot Cake Bites

One of our favorite concoctions for anyone needing a sweet fix. My family gobbles these down!

Carrot Cake Bites

INGREDIENTS:

-1 cup cashews (grind to powder) -1/2 cup rolled oats (grind to powder) -1/2 - 1 tsp cinnamon (preference) -5 medjool dates -1 cup baby carrots

DIRECTIONS:

1. Add to food processor in this order (order is important!):

-cashews (grind to powder) -rolled oats (grind to powder) -cinnamon -medjool dates -baby carrots

2. Use a small cookie scoop* or spoon to form approximately 1 inch diameter balls.

3. Can eat immediately but best to freeze for at least 10 minutes to form.

*I use Pampered Chef's mini cookie scoop to form these into balls. Not necessary, just makes life easier.
